Would it be possible to have a setting where we could specify the minimum length of the input field value from which the ajax search starts? As far as I can see, it's hardcoded to 3 characters, but I've built a shop where the SKUs are only 2 characters long.

It can be quite a lot more intensive to search 2 characters than 3 in the database. We will add this to feature requests!
